Soothing Red Lentil Soup

SOOTHING RED LENTIL SOUP 2024

It has been cold lately, very cold! It seems as if soups and stews are the daily staple now. Today I'd like to share with you a fairly new recipe of mine—a warming, nourishing, soothing red lentil soup.

We've been very busy lately, and, frankly, who hasn't these days? I have made multiple batches of this soup since its creation and it has been just perfect for a quick, warming lunch or an easy dinner. This tomato-free soup is chock full of greens, ginger, garlic, and onions...just the thing to support the immune system during cold and flu season. A dash of lemon juice at the end of cooking enlivens the flavors even more.

We brought this soup up to the mountains with us in a large Thermos last weekend and it was just the thing to warm our bellies after an afternoon of sledding. My 5-year old nephew was in town visiting with my mom. He liked the soup so much that he asked me to make sure I would send the recipe to his mom! He ate bowlfuls of it everyday while he was here!

Red lentils have a high degree of antioxidant activity due to their high polyphenol content. Red lentils are also high in folate, fiber, potassium, and protein! Serve this nutrient-dense plant-based soup recipe with a pot of brown rice for a balanced, nourishing meal.

GLUTEN-FREE CHICKEN AND DUMPLINGS-1

Gluten-Free Chicken and Dumplings

Chicken soup with dumplings is a classic meal that has its origins in Germany. Growing up, my mother would make large pots of chicken soup with dumplings all winter long, using the lengthy process of slow-cooking a whole chicken to make a nourishing broth, and then removing the meat for the soup and adding spoonfuls of the dumpling dough to the simmering broth. I still remember standing at the stove, watching the dough puff up as it cooked in the broth! My German maternal grandmother also made incredible dumplings with a variety of different beef and chicken stews for my mother and her siblings growing up. Dumplings are typically made from flour, butter, milk, and baking powder, and are added to the simmering broth or soup at the end of cooking. My recipe below uses several different gluten-free flours, eggs, and water for a simple dairy-free and gluten-free dumpling.

Harvest Vegetable Soup

It's autumn. The harvest is in. The fires are lit. The chill in the air invites simmering soups and stews in the kitchen. This nourishing, harvest vegetable soup recipe uses some common fall vegetables and some that you might not use that often like celeriac and rutabagas. I've created a detailed photo below to help you identify some of these vegetables when shopping. I've used both beef stew meat and cooked beans in this recipe so use whatever works best for your body! This recipe makes a large batch of soup. You will need a large pot that is at least 9-quarts in size. You can of course easily cut this recipe in half for a smaller batch.

Creamy Asparagus Soup with Cashew Dill Cream (dairy-free)

Spring is in the air, at least for those of us on the West Coast! With the season’s fresh produce making its way to markets, I’ve been enjoying a simple dairy-free asparagus soup that I think you’re going to love. The creamy, herb-infused raw cashew-dill topping adds a delicious touch, but don’t worry, if you’re allergic to cashews, the soup is just as delightful without it! Did you know that asparagus is a powerhouse for gut health? It’s an excellent source of inulin, a type of prebiotic fiber that feeds beneficial gut bacteria like bifidobacteria and lactobacilli. A thriving gut microbiome means better nutrient absorption, enhanced immunity, and protection against harmful pathogens.
